Hand-Picked Peach: Week 43

I've never shared a recipe as a Peach Pick before, but my family and I are obsessed with this chicken salad recipe from How to Feed a Loon.

I made it for J's first birthday and now we like to make it early on the weekends so that we don't have to stop working or playing outside to make up lunch or dinner all the time.  We can just run in when we get hungry, make up a sandwich and get back to getting stuff accomplished.

I should mention that this does make a large batch, so you might find a friend to share with if you are single or if it is just two of you.  It feeds our family of four (but remember two are toddlers) for three or more meals at a sandwich a piece.

I do however think that you need to add this to your summer recipe rotation.  You will not be disappointed that you did.  I've never had a better chicken salad than what I make with this recipe.
